Emanating from La Mancha, Manchego is Spain’s most well known cheese. At six months old, the semi-firm interior presents an off-white appearance dotted with holes & a smooth, mild flavor hinting at a slight nuttiness. Its recognizable rind, zigzagging along the rounded edge, celebrates the tradition of the cheese’s original molds that were hand-plaited using the durable esparto grass found throughout Spain. Manchego pairs perfectly with practically any spirit or accompaniment.
